Ramps — wild leeks that carpet mountain coves each spring — are treasure, and frying them in bacon fat is the classic treatment.

Step by stepInstructions

  1. Separate the ramp bulbs from the greens; chop the greens.
  2. Cook the bacon in a skillet until crisp; remove, leaving the fat.
  3. Sauté the ramp bulbs in the fat 3 minutes, then add the greens and cook 3-4 minutes more until wilted and tender.
  4. Season with salt and pepper and swirl in the butter.
  5. Serve hot, topped with the bacon.

💡 Chef tips & storage

Ramps are only around for a few weeks in spring — grab them when you see them. The whole plant is edible; cook bulbs a touch longer than greens.
