Turron

Turrón is Spain’s Christmas nougat — a dense, sweet slab of toasted almonds bound with honey, made in two classic forms: the hard, brittle Alicante turrón and the soft, fudgy Jijona turrón. It has been made in Spain since the Moors introduced almond-and-honey confectionery in the Middle Ages, and it is the non-negotiable sweet of every Spanish Christmas table, sold in every market from November onward.

Why this recipe works: Turrón is almonds and honey, nothing more: toasted almonds folded into honey cooked to the right temperature, then pressed into a slab and set. The hard version (Alicante) uses whole almonds in a brittle honey-caramel; the soft version (Jijona) grinds the almonds into a paste for a fudgy, marzipan-like texture. Both are intensely nutty, sweet, and made for slicing thin.

Key ingredients

  • Toasted almonds: whole for the hard version, ground for the soft version.
  • Honey: the binder and sweetness — good honey is essential.
  • Sugar: cooked with the honey.
  • Egg white (for the soft version): the fudgy binder.
  • A little lemon zest or cinnamon (optional): perfume.

Tips for the perfect turrón

Toast the almonds until fragrant and deeply golden — this is where most of the flavor comes from. Cook the honey and sugar to about 300°F (hard-crack) for the Alicante version, or to soft-ball for the softer Jijona, then fold in the almonds quickly — the mixture sets fast. Press it firmly into a parchment-lined mold and let it set completely before slicing with a heavy knife. For the soft version, blend the almonds into a paste and fold in whipped egg white for that fudgy texture.

Variations and storage

Add chocolate to make turrón de chocolate, or stud the slab with candied fruit. Turrón keeps 2 months in an airtight container at room temperature — it is built to last the holidays. Serve in thin slices with coffee.

Step by stepInstructions

  1. Line an 8x8-inch pan with rice paper, shiny side down.
  2. Heat the honey, sugar, and salt in a heavy saucepan over medium heat, stirring until the sugar dissolves. Cook to the soft-ball stage, about 245°F on a candy thermometer.
  3. Whip the egg white to stiff peaks in a large bowl.
  4. Slowly pour the hot honey mixture into the egg white in a thin stream, beating constantly, until thick and glossy.
  5. Fold in the toasted almonds and lemon zest, working quickly before the mixture sets.
  6. Press the mixture into the lined pan, cover with another sheet of rice paper, and cool completely. Slice into thin bars and store in an airtight tin.

💡 Chef tips & storage

Work fast once the almonds go in — the nougat sets quickly as it cools. For a softer, fudgy turrón, stop the honey at 240°F; for crunchy, cook to 250°F.
