A traditional Yucatecan dessert, Dulce de Papaya Yucateca turns green, unripe papaya into translucent golden strips bathed in a spiced syrup. Cinnamon, cloves and vanilla perfume the slow, patient cooking that is the heart of Yucatecan sweets. Served cool with a little of its syrup, it is the perfect end to a cochinita feast.

A traditional Yucatecan dessert, Dulce de Papaya Yucateca turns green, unripe papaya into translucent golden strips bathed in a spiced syrup.

Step by stepInstructions
- Boil the papaya strips in water for 10 minutes and drain; repeat once more — this removes the milky latex and bitterness of the green fruit.
- In a large pot, dissolve the sugar in the water, add the cinnamon, cloves, vanilla, orange zest and fig leaves, and simmer for 10 minutes.
- Add the drained papaya and simmer gently, uncovered, for 1 to 1½ hours, without stirring, until the strips turn translucent and the syrup thickens.
- Cool the papaya in its syrup — it will continue to thicken as it rests.
- Serve cool, with a few spoonfuls of the syrup over each portion.
💡 Chef tips & storage
Green, rock-hard papaya is essential; ripe papaya would collapse into mush. The syrup thickens as it cools, so do not boil it down too far in the pot.
