Tiropita — Greek phyllo pie with feta, ricotta and herbs

Tiropita is the Greek cheese pie that lives in every bakery window: layers of flaky phyllo wrapped around a warm, salty filling of feta, eggs, and herbs. It’s breakfast, snack, and comfort all at once.

Greeks eat tiropita at any hour — with coffee in the morning, as a meze, or as a quick dinner with a salad. Cut it into squares or roll it into spirals; either way, serve it warm.

Step by stepInstructions

  1. Preheat the oven to 375°F. Mix the feta, ricotta, eggs, dill, parsley, pepper, nutmeg, and milk until smooth.
  2. Brush a 9x13-inch dish with butter. Layer 6 phyllo sheets, brushing each.
  3. Spread the cheese filling evenly over the phyllo.
  4. Top with 6-7 more buttered phyllo sheets, tucking the edges in; brush the top with butter.
  5. Score into squares, then bake 35-40 minutes until puffed and deep golden.
  6. Cool 10 minutes before cutting; serve warm.

💡 Chef tips & storage

Let the filling come to room temperature so the phyllo bakes evenly. Wrap leftovers tightly and re-crisp in the oven, not the microwave.
