Fava Santorinis — silky golden yellow split pea purée with olive oil, onion and capers

Fava Santorinis is a velvety purée of yellow split peas from the volcanic island of Santorini — golden, earthy, and impossibly smooth. A generous pour of olive oil and a tangle of red onion turn it into a meze you will not forget.

On Santorini and across the islands, fava is served as a dip with bread, often alongside seafood or grilled octopus. It is naturally vegan, silky at room temperature, and improves after a few hours of rest.

Step by stepInstructions

  1. Sauté the chopped onion in 2 tablespoons of the olive oil until soft, about 5 minutes.
  2. Add the split peas, water, bay leaf, and a pinch of salt. Bring to a boil, then simmer gently 35-45 minutes, stirring occasionally, until the peas are very soft and falling apart.
  3. Remove the bay leaf. Purée with an immersion blender until silky, adding water if too thick.
  4. Whisk in the remaining olive oil and season generously with salt and pepper.
  5. Spread on a plate, swirl with a spoon, and top with the red onion, capers, and a drizzle of olive oil and vinegar.

💡 Chef tips & storage

Stir often near the end so the fava doesn't stick and scorch. It thickens as it cools — loosen it with warm water before serving.
