Loukaniko is the Greek sausage with a twist: pork seasoned with orange zest, fennel seed, and wine, then grilled until the casings blister and char. The bright citrus against the rich pork is unforgettable.

Loukaniko is a taverna favorite, served sliced as a meze with bread and a squeeze of lemon, or stuffed into a warm pita. It takes well to grilling, pan-frying, or a quick turn under the broiler.

Step by stepInstructions

  1. Mix the pork with the fennel, coriander, orange zest, garlic, salt, pepper, thyme, and red wine. Knead until sticky.
  2. Chill for 1 hour so the flavors meld.
  3. Either stuff the mixture into casings or shape it into thick patties and logs.
  4. Heat a grill or grill pan over medium heat and brush with the olive oil.
  5. Cook the sausages 12-15 minutes, turning often, until browned and cooked through (160°F).
  6. Rest 5 minutes, slice thick, and serve with lemon wedges.
