Forget the tin — properly braised Sauerkraut is mellow, tangy and quietly luxurious. Simmered with bacon, apple and caraway, the sharpness softens into a deep, savory-sweet character that pairs with almost anything.

It’s the indispensable German side: with sausages, schnitzel, roasts or Eisbein. Cook it slowly and taste as you go — the balance of tang, smoke and sweetness is yours to tune.

Step by stepInstructions

  1. Render the bacon in a large pot over medium heat until crisp. Remove and set aside, leaving the fat.
  2. Soften the onion in the bacon fat, about 8 minutes.
  3. Add the sauerkraut, apple, broth, wine, caraway, juniper, bay leaf, sugar and pepper. Stir well.
  4. Cover and simmer gently 40–45 minutes, stirring occasionally, until the kraut is tender and mellow.
  5. Stir in the butter and return the bacon to the pot.
  6. Taste and adjust — a pinch more sugar if too sharp, a splash of broth if too dry. Serve hot.

💡 Chef tips & storage

Rinse the kraut only if it's aggressively sour; the braise mellows it on its own. It reheats beautifully and tastes even better the next day.
