Layered like a winter quilt, herring under a fur coat stacks salted herring, potatoes, carrots, beets, and onion beneath a drift of mayonnaise. Sweet beets, briny fish, and creamy dressing make each spoonful a surprise, and the colors are a feast in themselves.

A fixture of Russian New Year tables, this festive salad is assembled ahead and chilled so the layers meld. Slice it like a cake and serve in thick wedges — tradition demands it be shared.

Step by stepInstructions

  1. Dice the herring finely and spread it evenly over the bottom of a deep glass dish.
  2. Scatter the onion over the herring.
  3. Grate the potatoes and spread them over the onion; season lightly and spread a thin layer of mayonnaise.
  4. Repeat with the carrots and another mayonnaise layer, then the beets.
  5. Cover the top completely with the remaining mayonnaise and smooth it out.
  6. Garnish with grated egg and dill, cover, and chill at least 4 hours or overnight before serving.

💡 Chef tips & storage

Chill overnight — the layers need time to marry, and the salad is far easier to slice when fully set. Grate the beets last so their color does not tint everything else.
