Big, satisfying pasta pockets stuffed with a savory mix of meat, spinach and herbs — Maultaschen are Swabia’s proudest kitchen invention. Boiled until tender, they can be floated in broth or crisped in butter with onions.
Legend calls them ‘little deception’ for hiding meat during Lent, and they’ve been a Friday-night staple ever since. Serve them in hot broth for a soothing supper, or pan-fried with a salad.
