The broth is deep red from tomato, fragrant with lemongrass and star anise, and just sweet enough from coconut water. Carrots and potatoes soak up all that flavor, turning soft and sweet as they cook. Tear off pieces of crusty baguette, dunk them in, and you will understand why this stew has a devoted following. Step by stepInstructions

  1. Brown the beef in batches in a large pot over medium-high heat until deeply seared, about 5 minutes per batch.
  2. Add the shallots, garlic, and ginger, and cook 2 minutes. Stir in the tomato paste and cook 1 minute more.
  3. Add the lemongrass, star anise, cinnamon, fish sauce, sugar, and coconut water. Add enough water to just cover the beef.
  4. Bring to a boil, reduce to a gentle simmer, and cook 1 hour 15 minutes, partially covered.
  5. Add the carrots and potatoes and simmer 30 minutes more, until the beef is tender and the vegetables are soft.
  6. Remove the lemongrass, star anise, and cinnamon.
  7. Serve hot in bowls with torn baguette for dipping.

💡 Chef tips & storage

Bruise the lemongrass stalks with the back of a knife so they release their oils, and fish them out before serving. The stew thickens as it sits; add a splash of water when reheating.
