Bacalhau à Brás is the most famous of Portugal’s thousand ways with salt cod — a golden tangle of shredded fish, hair-thin fried potatoes and softly scrambled eggs. Creamy, briny and utterly comforting, it comes together in one pan and disappears just as fast.

A tavern classic of Lisbon, it turns humble ingredients into something golden and glorious. Serve it at lunch with a green salad and olives, or late at night with a cold beer — either way, the eggs should stay soft and the potatoes crisp.

Step by stepInstructions

  1. Soak the salt cod for 24-48 hours, changing the water several times; simmer it gently for 5 minutes, drain, cool and shred.
  2. Fry the potato matchsticks in hot vegetable oil until golden and crisp, then drain on paper towels.
  3. In a wide skillet, soften the onion and garlic in the olive oil over medium heat.
  4. Add the shredded cod and toss for 3 minutes, then fold in the crispy potatoes.
  5. Pour in the beaten eggs and stir gently just until softly set and creamy — do not overcook.
  6. Season, top with parsley and olives, and serve immediately.

💡 Chef tips & storage

Pull the pan off the heat while the eggs are still a little soft — they finish cooking in the pan. Use well-soaked cod or the dish will be too salty.
