Bacalhau à Brás is the most famous of Portugal’s thousand ways with salt cod — a golden tangle of shredded fish, hair-thin fried potatoes and softly scrambled eggs. Creamy, briny and utterly comforting, it comes together in one pan and disappears just as fast.
