The Berner Platte is a grand platter of smoked pork chops, bacon, and sausages arranged over tangy sauerkraut, green beans, and buttery boiled potatoes. It is a feast that makes the table look like a celebration.

Born from farmhouse practicality—one pot feeding many—it is typically served with mustard and crusty bread, letting everyone build their own plate from the smoked, savory bounty.

Step by stepInstructions

  1. Put the pork chops, bacon, and sausages in a large pot and cover with water. Bring to a gentle simmer and cook 45 minutes, skimming off foam.
  2. Meanwhile, combine the sauerkraut, onion, juniper berries, apple, and wine in a separate pot. Cover and simmer over low heat for 45 minutes.
  3. Cook the potatoes in salted water until tender, about 20 minutes. Cook the green beans in another pot of salted water until crisp-tender, 6–8 minutes, then drain and toss with the butter.
  4. Slice the meats and arrange them on a large platter with the sauerkraut, beans, and potatoes. Serve with mustard on the side.

💡 Chef tips & storage

Simmer the meats gently rather than boiling hard so they stay juicy. Build the platter on the largest board you own and serve everything family-style with plenty of mustard.
