Malakoff are gloriously indulgent fried cheese fritters from the shores of Lake Geneva: molten Gruyère bound with white wine and garlic, coated in breadcrumbs, and fried until burnished. Crisp outside, lava within.

They make a spectacular appetizer or a decadent raclette-night alternative. Serve them piping hot with cornichons and a crisp white wine, and warn everyone about the molten center.

Step by stepInstructions

  1. Combine the cheese, eggs, wine, garlic, flour, nutmeg, salt, and pepper in a bowl; mix until it forms a thick, sticky paste. Chill 30 minutes.
  2. Shape the mixture into patties about 3 inches across and 3/4 inch thick; if too sticky, dust your hands with flour.
  3. Coat each patty in the breadcrumbs, pressing firmly.
  4. Heat the oil to 350°F and fry the patties in batches until deep golden and crisp, about 3–4 minutes per side. Drain on paper towels.
  5. Serve immediately with cornichons—the centers are molten.

💡 Chef tips & storage

Chill the cheese mixture well before shaping or it will be too sticky to handle. Serve piping hot: the contrast between the crisp crust and molten center is the whole point.
