Charquicán is the great ‘use-what-you-have’ dish of the Chilean countryside, traditionally made with sun-dried beef called charqui. Modern versions use fresh ground beef simmered with potatoes, pumpkin, and onion, then mashed together and finished with a golden fried egg.

The mash is rustic and slightly chunky, sweet from the pumpkin and rich from the beef, with cumin and paprika warming every bite. A crispy-edged fried egg on top turns it into a complete, deeply satisfying plate.
