Nusstorte — Swiss nut torte — is the caramelized walnut tart of Switzerland, a close cousin of the famous Engadiner torte: a crisp shortcrust filled with a dark, glossy mixture of walnuts, caramel, and cream, baked until the filling sets into a dense, nutty slice. Every Swiss bakery sells it, and one thin slice with coffee is the classic alpine indulgence. It is the dessert that makes walnuts feel like a celebration.

  1. Pulse the flour, 1/3 cup sugar, and cold butter until crumbly; add the egg yolk and water and form a dough. Chill 30 minutes.
  2. Simmer the 3/4 cup sugar, cream, honey, filling butter, and salt in a saucepan, stirring, until a light caramel forms, about 8 minutes. Stir in the nuts and cool slightly.
  3. Press two-thirds of the dough into a 9-inch tart pan; spread the filling over it.
  4. Roll out the remaining dough into a lid, lay it over the filling, seal and crimp the edges, and cut a few steam vents.
  5. Bake at 350°F for 35–40 minutes until golden. Cool completely before slicing.
