Basler Läckerli are Basel’s famous honey-spice biscuits — chewy, glossy, intensely spiced cookies of honey, candied orange and lemon peel, hazelnuts, and almonds, with a dark cinnamon-clove kick and a crackly sugar glaze. They have been made in Basel since the 14th century, and they are one of Switzerland’s most beloved exports. Dense, fragrant, and just chewy enough, they are made for cutting into neat rectangles and enjoying with coffee.

Why this recipe works: The dough is a thick, sticky mixture of honey, sugar, flour, ground nuts, candied peel, and a serious dose of spices — baked in a single sheet, glazed while hot, and cut into rectangles. The honey gives them their chew and their deep sweetness, the nuts and peel provide texture, and the spice blend (cinnamon, cloves, sometimes nutmeg and ginger) makes them unmistakably Läckerli.

Key ingredients

  • Honey: the soul — good honey makes a real difference.
  • Candied orange and lemon peel: the classic fruit.
  • Hazelnuts and almonds: the texture.
  • Cinnamon, cloves, and a pinch of nutmeg: the spice blend.
  • A sugar glaze: the crackly top.

Tips for perfect Basler Läckerli

Warm the honey so it blends easily into the dough, and let the dough rest overnight in the fridge — the flavors meld and the dough becomes easier to roll. Roll it into a neat rectangle about 1/2-inch thick on parchment, and bake at 350°F until golden, 20 to 25 minutes. Brush with a hot sugar syrup the moment it leaves the oven, then cut into rectangles while still warm — before the glaze hardens. Cool completely; the glaze sets into the signature crackly sheen.

Variations and storage

Add a drop of kirsch or a pinch of ginger. Basler Läckerli keep 2 to 3 weeks in an airtight tin at room temperature — they are built to keep, like all great travel biscuits — and they actually improve with a few days of rest.

Step by stepInstructions

  1. Warm the honey, sugar, water, and butter in a saucepan over low heat until the sugar dissolves. Let cool slightly.
  2. In a bowl, combine the flour, almonds, candied peels, cinnamon, cloves, nutmeg, baking powder, and salt. Pour in the honey mixture and stir into a stiff dough. Cover and rest 1 hour at room temperature.
  3. Preheat the oven to 350°F. Roll the dough on a lightly floured surface into a rectangle about 1/4 inch thick and transfer to a parchment-lined baking sheet.
  4. Bake 12–15 minutes, until firm and lightly golden at the edges. Brush immediately with the glaze while hot.
  5. Cool 10 minutes, then cut into rectangles with a sharp knife; cool completely in the pan.

💡 Chef tips & storage

Resting the dough makes it much easier to roll, and the glaze must go on while the sheet is still warm so it sets to a shine. These keep for weeks in an airtight tin.
