Tender veal cutlets pounded whisper-thin, breaded in golden crumbs, and fried until the crust shatters — Austria’s most famous export, served with lemon and lingonberry.

The golden cutlet of Vienna

Wiener Schnitzel has guarded its identity for over 150 years — by law the name belongs only to veal, breaded the Viennese way: flour, egg, crumbs, and a sizzling bath of clarified butter. Emperor Franz Joseph ate it often; today the whole world claims it.

Step by stepInstructions

  1. Place each cutlet between two sheets of plastic wrap and pound with a mallet to 1/4-inch thickness. Season lightly with salt and pepper.
  2. Set up three shallow dishes: flour, beaten eggs, and breadcrumbs. Dredge each cutlet in flour, shake off the excess, dip in the egg, then press gently into the breadcrumbs.
  3. Heat the clarified butter in a large skillet over medium-high heat to 350°F. Fry the cutlets one or two at a time, 2-3 minutes per side, until deep golden and crisp.
  4. Drain on paper towels and serve immediately with lemon wedges and lingonberry jam.

💡 Chef tips & storage

The crust should ruffle as it fries — press the breadcrumbs on gently and never crowd the pan. Serve straight from the pan; a Wiener Schnitzel that waits turns soggy.
