Knödel were born of thrift: day-old bread, milk, and bacon scraps turned into a filling meal that fed farmers through long winters. Every Austrian region has its own — spinach, cheese, liver — but none is more loved than the bacon-speck version of Tyrol.

Step by stepInstructions

  1. Place the bread cubes in a large bowl and pour the warm milk over them; let soak 10 minutes.
  2. Meanwhile, cook the bacon in a skillet until crisp and remove. Soften the onion in the bacon fat with the butter, then cool slightly.
  3. Add the bacon, onion, parsley, eggs, flour, salt, pepper, and nutmeg to the bread. Mix with your hands until the mixture holds together when pressed — add a little more flour if too wet, a splash of milk if too dry.
  4. Shape into 8 large dumplings with wet hands.
  5. Bring a large pot of salted water to a gentle simmer (not a rolling boil). Slide in the dumplings and cook 15-18 minutes, until they float and are cooked through.
  6. Lift out with a slotted spoon and serve with sauerkraut, roast pork, or in beef broth.

💡 Chef tips & storage

Wet your hands before shaping so the dough doesn't stick. Simmer, don't boil — rolling water makes dumplings disintegrate.
