A rustic, meat-free goulash of potatoes simmered in a rich paprika sauce — the frugal Austrian classic that proves goulash doesn’t need meat.

The penny-pincher’s goulash

Erdäpfel is Austrian dialect for potato, and this goulash was born in kitchens where meat was a luxury. Potatoes, onions, and good paprika simmer into a thick, satisfying stew that’s served on its own or alongside sausages and schnitzels.

Step by stepInstructions

  1. Heat the lard in a large pot and cook the onions over medium heat 10 minutes, until soft and golden.
  2. Stir in the paprika, tomato paste, garlic, caraway, marjoram, salt, and pepper; cook 1 minute until fragrant.
  3. Add the potatoes, vinegar, and broth. Bring to a simmer, cover, and cook 25-30 minutes until the potatoes are tender and the sauce has thickened.
  4. Stir in the sugar and parsley, mash a few potatoes against the pot to thicken the sauce further, and season to taste.
  5. Rest 10 minutes before serving with bread, sausages, or schnitzel.

💡 Chef tips & storage

The paprika needs a moment in hot fat to release its flavor — don't skip that minute. Use waxy potatoes so the chunks keep their shape.
