Gulaschsuppe fed the armies of the Habsburg Empire — portable, filling, and forgiving of any cut of beef. It’s the soupier cousin of Wiener Gulasch, and Austrians still serve it steaming from huge pots at markets and ski huts, with bread for dunking.

Step by stepInstructions

  1. Heat the lard in a large pot and cook the onions over medium heat 10 minutes until soft and golden.
  2. Add the beef and brown for 5-6 minutes. Stir in the paprika, tomato paste, garlic, caraway, marjoram, salt, and pepper; cook 1 minute.
  3. Deglaze with the vinegar, then add the broth. Simmer, covered, 1 hour.
  4. Add the potatoes and bell pepper and simmer 20-25 minutes more, until the beef is tender and the potatoes are soft.
  5. Season to taste, stir in the parsley, and serve steaming hot with crusty bread.

💡 Chef tips & storage

The beef needs its full hour before the potatoes go in — tender meat is the point. This soup tastes even better reheated the next day.
