Sweet caramelized cabbage tossed with small square egg noodles and caraway — a humble Austrian staple that turns cabbage into gold.

The cabbage that shines

Krautfleckerl is the great Austrian pantry dish: onions and cabbage cooked slowly until they’re jammy and sweet, folded through Fleckerl — little square noodles — and finished with a generous grind of pepper. Simple, cheap, and deeply satisfying.

Step by stepInstructions

  1. Cook the noodles in salted boiling water until al dente; drain, reserving 1/2 cup of the pasta water.
  2. Meanwhile, heat the butter and oil in a large, deep skillet over medium heat. Cook the onions 5 minutes, then add the cabbage, sugar, salt, and caraway.
  3. Cook 20-25 minutes, stirring often, until the cabbage is deep golden brown and caramelized. Add splashes of pasta water if it dries out.
  4. Stir in the vinegar and pepper, then fold in the cooked noodles.
  5. Cook 3-4 minutes more so the noodles absorb the flavors, then serve hot with the parsley.

💡 Chef tips & storage

Don't rush the cabbage — the long, slow caramelization is where the sweetness comes from. Use white cabbage and slice it thin so it melts into the noodles.
