Goulash Hongrois

Goulash Hongrois is the mother of all Hungarian soups — a ladleful of meltingly tender beef, sweet peppers, and potatoes in a paprika-red broth that hums with caraway and garlic. It’s rustic, deeply savory, and endlessly satisfying.

Originally a herdsman’s dish cooked over open fires on the puszta, goulash is today a national treasure served in every home and restaurant. Eat it with crusty bread, or add csipetke dumplings and call it a full meal.

Step by stepInstructions

  1. Heat the lard in a heavy pot and brown the beef in batches; set aside.
  2. Cook the onions in the same pot until golden, then add the garlic and caraway and cook 1 minute.
  3. Remove from heat, stir in the paprika, then return to heat. Add the bell pepper, tomato, bay leaf, broth, and the beef.
  4. Bring to a boil, reduce to a gentle simmer, and cook covered for 1 1/2 hours until the meat is tender.
  5. Add the carrots and potatoes and simmer 20-25 minutes more until soft.
  6. Season with salt and pepper. If you like, add csipetke dumplings for the last 10 minutes of cooking.

💡 Chef tips & storage

The beef wants long, gentle simmering — low heat is non-negotiable. Stir the paprika in off the heat so it perfumes the oil without scorching.
