Uszka — ‘little ears’ — are Poland’s dainty dumplings, tiny folded parcels of mushroom filling served floating in clear barszcz. They’re the essential companion to the Christmas Eve beet soup, and their name comes from their resemblance to small ears.

Folding uszka is a cherished holiday ritual, with families gathering around the table to pinch the little shapes by the hundred. With their earthy mushroom filling and silky dough, they transform a simple soup into a festive occasion.

Step by stepInstructions

  1. Soak the dried mushrooms in 1 cup hot water for 30 minutes. Drain (reserve the liquid), chop finely, and simmer in the soaking liquid for 15 minutes; drain.
  2. Knead the flour, egg, warm water, and salt into a smooth dough. Cover and rest for 30 minutes.
  3. Sauté the onion in the butter until golden, add both mushrooms, and cook until dry. Season with salt and pepper and cool completely.
  4. Roll the dough thin and cut into 2-inch squares or rounds. Place 1/2 teaspoon of filling on each, fold into a triangle, and pinch the two bottom corners together to form a little ear. Seal with egg white.
  5. Boil the uszka in salted water for 3-4 minutes after they float.
  6. Ladle hot barszcz into bowls and add a few uszka to each. Serve immediately.

💡 Chef tips & storage

Keep the filling very dry or the dumplings will burst. Uszka freeze beautifully — lay them on a floured tray, freeze solid, then bag.
