Escargots de Bourgogne are plump snails baked in a riot of garlic, parsley, and shallot butter until the butter sizzles and the tops turn golden. The snail itself is mild and tender — the herb butter is the real star.
A celebrated appetizer of Burgundy, they are traditionally served in their shells (or a special escargot dish) bubbling hot, with plenty of crusty bread for soaking up every drop. Brave first-timers usually become converts after one bite.
