Blini

Thin, tender, and faintly tangy, blini are Russia’s answer to the crepe — only softer and more comforting. Made with a yeasted batter, they puff at the edges and soak up butter, sour cream, and everything sweet or savory you care to wrap in them.

Blini are the heart of Maslenitsa, the pancake week that welcomes spring, but they shine year-round as breakfast, snack, or appetizer. Serve them with caviar, smoked fish, jam, or honey — there is no wrong filling.

  1. Whisk the flour, yeast, sugar, and salt together in a large bowl.
  2. Whisk in the warm milk, eggs, and melted butter until smooth; cover and let rise in a warm spot for 45-60 minutes until bubbly.
  3. Heat a lightly oiled skillet over medium heat and pour in a small ladleful of batter, tilting the pan to coat the bottom thinly.
  4. Cook until the edges look dry and the underside is golden, about 1-2 minutes, then flip and cook 30-60 seconds more.
  5. Stack the blini on a plate under a clean towel and repeat with the remaining batter.

Rest the batter until it is bubbly — this gives blini their delicate, slightly spongy texture. Keep finished blini covered with a towel so they stay soft and warm.
