  3. Spread the sweet vermicelli into a serving dish, pressing it into an even layer, and let it cool slightly.
  4. Heat the oil in a nonstick skillet and pour in the beaten eggs, tilting to make a thin omelet.
  5. Cook until just set and lightly golden, about 3 minutes, then flip and cook 30 seconds more.
  6. Slide the omelet over the vermicelli, trimming it to fit.
  7. Scatter with the nuts and serve warm.
