Crisp-edged, golden potato pancakes with a soft, fluffy heart — draniki are comfort food at its most honest. Grated potato, a little onion, and almost nothing else turn into something far greater than the sum of their parts.

Best eaten straight from the skillet, draniki are traditionally served with sour cream, and sometimes garlic or mushroom sauce. They make a hearty breakfast, a side for meat, or a snack that vanishes embarrassingly fast.

Step by stepInstructions

  1. Grate the potatoes and onion on the large holes of a box grater into a bowl.
  2. Squeeze out as much liquid as possible, then stir in the egg, flour, salt, and pepper until just combined.
  3. Heat 1/4 inch of oil in a large skillet over medium-high heat.
  4. Drop heaping tablespoons of the mixture into the pan and flatten slightly; fry until deep golden and crisp, 3-4 minutes per side.
  5. Drain on paper towels and serve hot with sour cream.
