Prince Edward Island became a mussel powerhouse in the 1980s, when fishermen began growing mussels on submerged ropes instead of dragging the seabed. The result was a cleaner, sweeter, impossibly plump bivalve that made PEI mussels a household name from coast to coast.
They are the easiest impressive dish in the Maritime canon: a pot, some wine, a lot of garlic, and ten minutes of steam. The mussels open like little gifts, and the broth they leave behind — soak it up with bread or fight over it with a spoon.
