Spam arrived in Hawaii during World War II as military rations and became a pantry staple, especially in plantation communities. Somewhere along the way, someone married a slab of pan-fried Spam with sushi rice and nori, and the Spam musubi was born, a snack so beloved that convenience stores sell them by the thousands daily.

What makes it great is its portable perfection: glossy rice seasoned with vinegar and sugar, salty-sweet Spam glazed in shoyu, and a crisp band of nori to hold it together. Warm from the griddle or packed in a lunchbox, it is pure island comfort.

Step by stepInstructions

  1. Rinse the rice until the water runs clear, then cook in a rice cooker or pot. While warm, fold in the rice vinegar, 2 tablespoons sugar, and salt; let cool slightly.
  2. Slice the Spam into 8 equal slabs. In a small bowl, stir together the soy sauce, mirin, and remaining 2 tablespoons sugar.
  3. Heat the oil in a skillet over medium-high heat and pan-fry the Spam until browned on both sides. Pour the glaze over the Spam and let it bubble and caramelize, about 1 minute per side.
  4. Line a musubi mold (or a clean Spam can lined with plastic wrap) and pack in a layer of rice. Press a glazed Spam slice on top and cover with another thin layer of rice.
  5. Remove from the mold and wrap a nori strip around the middle, sealing the edge with a dab of water. Repeat with the remaining pieces.

💡 Chef tips & storage

Wet your hands before handling the rice so it does not stick to your fingers. A Spam musubi mold makes tidy, uniform pieces, but a clean Spam can lined with plastic wrap works just as well.
