Newfoundland Jiggs dinner with corned beef, cabbage and root vegetables

Jiggs dinner is the Maritime Sunday classic, named after a comic-strip character whose wife fed him boiled beef and cabbage — a joke that stuck so hard the whole dish took the name. Its roots go deeper: salt beef simmered with whatever the garden and root cellar provided, the original one-pot meal.

Everything cooks in one pot, so the cabbage turns buttery and the potatoes soak up the beef’s rich, salty broth. Serve it with mustard on the side and a cup of the pot liquor poured over top — that is how generations of Maritimers have eaten it, and they are not wrong.

Step by stepInstructions

  1. Rinse the corned beef and place it in a large pot, cover with fresh water, and add the peppercorns and bay leaf.
  2. Bring to a boil, skim off any foam, then reduce the heat and simmer for 3 to 4 hours until the meat is tender.
  3. Add the potatoes, carrots, turnip and onions to the pot and simmer for 20 minutes.
  4. Add the cabbage wedges and cook for 15 minutes more, until everything is tender.
  5. Slice the beef and arrange it on a platter with the vegetables, and serve with mustard and a ladle of the pot liquor.

💡 Chef tips & storage

Cook the vegetables in the same pot as the beef so they soak up the flavour — that pot liquor is liquid gold. Leftover beef is superb sliced cold with mustard the next day.
