Screech is Newfoundland’s famous dark rum, and its story is tied to the salt fish trade — after the Second World War, Caribbean rum came back to St. John’s in the holds of ships that had carried cod south. Newfoundlanders adopted it with a ceremony all their own: newcomers were ‘screeched in’ with a kiss of the cod and a mouthful of the rum. Somewhere along the way, someone poured it into a cake, and the kitchen party has never been the same.

What makes it great is the way the warm, spiced rum soaks into a tender, buttery crumb and a crown of toasted pecans, making every slice moist and fragrant. It’s rich enough for a celebration but simple enough to throw together for company. The cake keeps for days wrapped in foil — if it lasts that long — and a slice with a cup of tea is a little taste of the Rock wherever you are.

Step by stepInstructions

  1. Preheat the oven to 325°F and generously butter a bundt pan, then scatter the pecans evenly over the bottom.
  2. Cream the butter and 2 cups of sugar together until light and fluffy, then beat in the eggs one at a time.
  3. Stir the vanilla into the milk, and whisk the flour, baking powder and salt together in a separate bowl.
  4. Add the dry ingredients to the batter in three additions, alternating with the milk mixture, and finish with the rum.
  5. Pour the batter into the prepared pan and bake for 55 to 65 minutes, until a skewer comes out clean.
  6. While the cake bakes, simmer the remaining sugar with the water for 5 minutes, then stir in 1/4 cup of rum.
  7. Let the cake cool in the pan for 10 minutes, then turn it out and brush the hot rum syrup over the top and sides.
  8. Cool completely, then wrap well in foil and let it rest overnight before slicing.

The rest overnight is not optional — the syrup needs time to work its way through the cake. Wrap it tightly in foil and it keeps for up to a week, getting better each day.
