Codfish cakes are the Atlantic coast’s answer to making a little go a long way. Salt cod was the region’s great preserved staple, and for generations, cooks soaked it, simmered it, and folded it into mashed potato to feed a family on a Friday or a Lenten Saturday night.
The best ones have a crackling brown crust and a soft, savoury heart, with just enough onion to make the kitchen smell like home. They are eaten with ketchup, sometimes with baked beans, and always with the feeling that supper is going to be all right.
