Fisherman’s brewis is the dish that sailed on every schooner out of every outport harbour. On a fishing boat, the food had to keep — salt fish and hard bread both would, almost indefinitely — and when the crew came in cold and soaked from the dories, the cook would put on a pot of fish and brewis that had been soaking since the night before. It was fuel for hard work, and its roots go back to the days when a voyage out meant a month or more at sea.

What makes it great is the same thing that made it practical: simple, sturdy ingredients that come together into a deeply satisfying meal. The salt cod flakes apart into savoury pieces, the hard bread softens into a tender, chewy bed, and the whole thing gets dressed with hot scrunchions and often a spoonful of molasses. It’s salty, porky, sweet and completely, unmistakably Newfoundland — a bowl of it is a history lesson you can eat.

Step by stepInstructions

  1. Soak the salt cod in cold water overnight, changing the water once, and soak the hard bread separately in cold water overnight.
  2. Drain the fish, place it in a pot of fresh cold water and simmer for 15 to 20 minutes until it flakes, then drain.
  3. Drain the hard bread, add it to a pot of fresh simmering water and cook 5 to 10 minutes until tender, then drain well.
  4. Fry the salt pork cubes in a skillet over medium heat until golden and crisp to make the scrunchions.
  5. Combine the fish and brewis in a large bowl, toss with the butter and onion, and season with pepper.
  6. Serve heaped on plates with the hot scrunchions poured over the top, and molasses on the side.

💡 Chef tips & storage

The overnight soak does all the work — don't skip it or the salt and the hard bread will both fight you. Serve it as hot as you can stand, with molasses to cut the salt.
