They were born of economy — every scrap of salt pork was precious, and rendering the fat gave you both cooking fat and a crisp, salty garnish in one go. What makes them great is the way those little crispy cubes add a pop of salty, porky richness that transforms whatever they touch. They’re the finishing flourish that turns a plain dish into a proper feed, and the rendered fat left behind is the best frying medium in the province. Make a big batch, keep the fat, and sprinkle the scrunchions over everything for a week.

  1. Cut the salt pork into small cubes, about 1/2 inch across, keeping the fat and meat together.
  2. Place the cubes in a cold, heavy skillet and add the water.
  3. Set the pan over medium heat and cook, stirring now and then, until the water evaporates and the fat begins to render.
  4. Continue frying, lowering the heat slightly, until the cubes turn golden brown and crisp all over — about 10 to 15 minutes total.
  5. Remove the scrunchions with a slotted spoon and drain them on paper towels.
  6. Pour the rendered fat into a jar and save it for frying toutons, fish or potatoes.

Starting the pork in cold water keeps it from burning before the fat renders — patience gets you perfectly crisp scrunchions. Store them in the fridge in a covered jar, and re-crisp them in a hot pan for a minute before serving.
