This version wraps herby, seasoned pork in buttery flaky pastry until it is crisp and golden outside and juicy within. They are simple enough for a weeknight snack and impressive enough for company, and they freeze beautifully — which is how every prairie baker manages to have a tray ready at all times.

Step by stepInstructions

  1. In a large bowl, combine the ground pork, onion, garlic, breadcrumbs, egg, sage, thyme, salt, and pepper, and mix until well blended.
  2. Roll the puff pastry out slightly on a floured surface and cut it lengthwise into 3 long strips.
  3. Divide the filling into 3 portions and shape each into a log along the center of each pastry strip.
  4. Brush one edge of each strip with the egg wash, then fold the pastry over the filling and press the edges to seal.
  5. Chill the rolls for 20 minutes, then cut each log into 2-inch pieces and place them seam-side down on a parchment-lined baking sheet.
  6. Brush the tops with the egg wash, sprinkle with fennel seeds if using, and bake at 400°F for 20 to 25 minutes, until golden brown and puffed.
  7. Cool for 5 minutes before serving warm.

Chilling the assembled rolls before baking keeps the pastry flaky and the filling from leaking. These freeze beautifully unbaked — freeze on a tray, then bake straight from the freezer, adding 5 minutes. Serve with mustard or honey garlic sauce for dipping.
