Black cod — also known as sablefish — is the richest fish in the Pacific, with a high fat content that makes it almost buttery on the tongue. First Nations peoples of the coast prized it for its oil and its keeping qualities, and smokehouses have been curing it over alder fires for generations, a technique that BC commercial smokers still use today.
What makes it great is that marriage of sweet brine and clean wood smoke: the fish takes on a golden, glistening surface while the interior stays tender and succulent, flaking into large, moist pieces. Smoked black cod is wonderful on its own with a squeeze of lemon, flaked into chowder, or served warm on a bagel. It’s a taste of the old coast, and it never gets old.
