Sockeye is the most iconic of the five Pacific salmon species — the one with the deep crimson flesh and the heroic upstream journey that draws crowds to BC rivers every summer. For the Coast Salish peoples it has always been the staff of life, and even today, a fresh sockeye fillet is the benchmark against which all other salmon is measured.

What makes roasting it great is that it needs so little: sockeye is so flavourful that lemon, garlic, and herbs are all the company it asks for. A hot oven crisps the edges and keeps the centre moist and rosy, and the whole side roasts in under half an hour. It’s the dish I reach for when I want something that feels special but comes together with almost no effort.

Step by stepInstructions

  1. Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper.
  2. Place the salmon skin-side down on the baking sheet and pat the flesh dry with paper towels.
  3. Rub the fillet all over with olive oil and season generously with salt and pepper.
  4. Tuck the garlic slices and lemon slices over the top of the salmon, then scatter over the dill and parsley.
  5. Roast for 15 to 18 minutes, until the flesh is opaque and flakes easily with a fork but is still moist in the centre.
  6. Slide the salmon onto a serving platter, spoon over any pan juices, and serve hot or at room temperature.

💡 Chef tips & storage

Sockeye is leaner than chinook, so take care not to overbake it — pull it from the oven when the centre still has a hint of rosy translucency. Let it rest 5 minutes; the carryover heat finishes the job.
