Step by stepInstructions

  1. Sauté the mushrooms in 1 tablespoon of the butter over medium-high heat until golden and their liquid has evaporated, then season with salt and set aside.
  2. Melt another tablespoon of butter in the same pan and cook the shallot and garlic for 2 minutes until soft.
  3. Add the rice and stir for 2 minutes until the grains are glossy and toasted at the edges.
  4. Pour in the wine and stir until it's mostly absorbed, then begin adding the warm stock one ladle at a time, stirring constantly, waiting for each addition to be absorbed before adding the next.
  5. After about 18 to 20 minutes, when the rice is creamy and just tender, stir in the mushrooms, remaining butter, Parmesan, and thyme.
  6. Season to taste and serve immediately in warm bowls.
