The geoduck — pronounced ‘gooey-duck’ — is a remarkable creature: a giant burrowing clam that can live for over a century in the sandflats of the BC coast, and whose name comes from the Nisqually word for ‘dig deep.’ First Nations peoples have harvested it for thousands of years, and today its firm, briny meat is prized by chefs in Vancouver and shipped fresh to markets across Asia.

What makes it great is the texture: crunchy and delicate at once, like the best scallop with a whisper of clam sweetness and a clean, ocean finish. Sliced thin and served icy cold with soy, wasabi, and a squeeze of lemon, geoduck sashimi lets the clam speak entirely for itself. It’s a true West Coast delicacy — unusual, memorable, and utterly delicious.

Step by stepInstructions

  1. Blanch the live geoduck in boiling water for 10 seconds, then plunge it immediately into ice water to loosen the shell.
  2. Pull the geoduck from its shell and separate the body from the long siphon, discarding the dark, rubbery outer skin.
  3. Split the siphon lengthwise, rinse it thoroughly under cold water to remove any sand, and pat it dry.
  4. Slice the siphon and body crosswise into thin, even slices about 1/8 inch thick.
  5. Arrange the slices on a platter over crushed ice with the cucumber garnish.
  6. Serve immediately with soy sauce, wasabi, and lemon wedges on the side.

The quick blanching step is key — it makes the skin slide off and firms up the meat without cooking it. Keep everything ice-cold and slice as thinly as you can for the best texture.
