Mujaddara

Mujaddara is the comfort food of the Levant, a dish so old it is mentioned in medieval Arabic cookbooks. Lentils and rice simmered together with cumin, then buried under slow-cooked onions that turn sweet and jammy — a meal that costs pennies and tastes like a fortune. In Lebanon it is called the poor man’s dish, but it holds its own on any table.

There is real alchemy in this plain-looking bowl: the earthy, almost nutty lentils and tender rice soak up a broth spiced with cumin, while the onions — cooked long and low until they collapse into mahogany silk — bring the sweetness that makes every bite addictive. It is traditionally served on Fridays in Lebanon, a meatless meal that nobody ever complains about, and the slow-cooked onions are the one step you cannot rush.

Step by stepInstructions

  1. Heat the olive oil in a large pot over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, until deep golden brown and caramelized, 20 to 25 minutes. Scoop out half the onions and set aside for topping.
  2. Add the lentils and 3 cups water to the pot with the remaining onions. Bring to a boil, then reduce to a simmer and cook, covered, for 15 minutes.
  3. Stir in the rice, cumin, salt, and pepper. Cover and cook over low heat until the rice and lentils are tender and the liquid is absorbed, about 20 minutes.
  4. Remove from the heat and let sit, covered, for 10 minutes. Fluff gently with a fork.
  5. Serve in bowls topped with the reserved caramelized onions, a spoonful of yogurt, and a sprinkle of herbs.

💡 Chef tips & storage

Take the onions all the way to deep brown — that is where the sweetness lives. If the rice is still firm after the liquid is gone, splash in 1/4 cup hot water, cover, and cook 5 minutes more.
