Morcilla Colombiana

Morcilla is the blood sausage of Colombia, a staple of fritangas, bandejas, and Christmas tables across the country. Rice, fresh pork blood, and a generous hand of herbs are stuffed into casings and poached, then crisped before serving.

Herby, rich, and best with a crisp edge

The filling is moist and softly crumbly, perfumed with cilantro and scallion, with rice giving it a gentle bite. Sliced and crisped in a hot pan, it is rich, earthy, and utterly at home beside chicharrón and arepas.

Step by stepInstructions

  1. Sauté the onion, scallions, and garlic in the oil for 4 minutes and let cool.
  2. In a bowl, combine the cooled vegetables, rice, blood, cilantro, cumin, salt, and pepper into a loose filling.
  3. Tie one end of a casing, fill it with the mixture, and tie the other end, leaving a little slack.
  4. Prick the sausage in a few spots and poach in barely simmering water for 35 to 40 minutes until firm.
  5. Drain and cool; slice and crisp in a hot skillet for 2 minutes per side if desired.
  6. Serve hot with arepas, hogao, and lime wedges.

💡 Chef tips & storage

Poach at a bare simmer — boiling makes the casings split. Morcilla keeps 3 days refrigerated; reheat in a skillet until the edges crisp again.
