Balila is Lebanon’s humblest snack and one of its oldest: warm chickpeas tossed with garlic, lemon, cumin, and a generous pour of olive oil. The magic is in the dressing — garlic mashed into olive oil with lemon and cumin, poured over warm chickpeas so every one glistens. The chickpeas stay plump and tender, soaking up the sauce like tiny sponges, and a pinch of salt and a scatter of parsley finish it off. Some versions add a spoonful of yogurt on top or a whisper of chili for heat. Eat it with pita for a snack, or spoon it beside grilled meat as the simplest side dish in the Lebanese kitchen — served warm, it is comfort in its simplest form.
