Warm Lebanese balila chickpeas in garlicky lemon oil with parsley

Balila is Lebanon’s humblest snack and one of its oldest: warm chickpeas tossed with garlic, lemon, cumin, and a generous pour of olive oil. Street vendors sell it by the cup, and home cooks serve it as a mezze that costs little and satisfies completely. It is the dish that proves the best food needs only a few honest ingredients.

Warm, garlicky chickpeas in lemony olive oil

The magic is in the dressing — garlic mashed into olive oil with lemon and cumin, poured over warm chickpeas so every one glistens. The chickpeas stay plump and tender, soaking up the sauce like tiny sponges, and a pinch of salt and a scatter of parsley finish it off. Some versions add a spoonful of yogurt on top or a whisper of chili for heat. Eat it with pita for a snack, or spoon it beside grilled meat as the simplest side dish in the Lebanese kitchen — served warm, it is comfort in its simplest form.

Step by stepInstructions

  1. Put the chickpeas in a saucepan, cover with water, and simmer for 10 minutes until warmed through and tender.
  2. In a small bowl, mash the garlic with the salt into a paste. Whisk in the lemon juice, olive oil, cumin, and pepper.
  3. Drain the chickpeas well and transfer to a serving bowl.
  4. Pour the dressing over the warm chickpeas and toss to coat thoroughly.
  5. Taste and adjust salt and lemon. Scatter with parsley and serve warm with pita.

💡 Chef tips & storage

Serve balila warm — the dressing clings to hot chickpeas far better than cold ones. For a creamier version, mash a few chickpeas into the dressing before pouring it over.
