Lebanese pistachio baklava with honey-lemon syrup

Baklava is the pastry every Lebanese bakery stacks in glittering towers: layer upon layer of buttered phyllo cradling crushed pistachios or walnuts, baked until it shatters, then bathed in a syrup of sugar, honey, and lemon. It is served at weddings, holidays, and any visit worth celebrating, and every family has opinions about the nut-to-phyllo ratio.

Done properly, baklava is a study in contrasts: impossibly thin, crisp layers that crackle, a filling of nuts that stays slightly coarse and toasty, and syrup that soaks through just enough to make it moist without weighing it down. The syrup should be poured cold over the hot pastry so the top stays shattery. A drop of rose or orange blossom water in the syrup gives it a perfumed finish. Cut it into diamonds while it is still warm, then let the whole pan rest — if you can wait, it only gets better overnight.

  1. Make the syrup: combine the 1 1/2 cups sugar, water, honey, and lemon juice in a saucepan. Bring to a boil, then simmer 10 minutes. Stir in the orange blossom water and cool completely.
  2. In a bowl, mix the pistachios with the 1/3 cup sugar and cinnamon.
  3. Preheat the oven to 350°F. Brush a 9-by-13-inch baking dish with butter. Lay a sheet of phyllo in the dish and brush with butter. Repeat with half the sheets (about 15).
  4. Spread the nut mixture evenly over the phyllo. Layer and butter the remaining sheets on top, finishing with butter.
  5. Cut the pastry into diamonds with a sharp knife. Bake until deeply golden, 40 to 45 minutes.
  6. Pour the cold syrup over the hot baklava and let it soak in completely before serving, at least 3 hours.

Keep the phyllo covered with a damp towel while you work — it dries out in seconds. Pour the syrup cold over the hot pastry, then give the pan hours to rest so every layer drinks it in.
