Aşure Turkish wheat pudding with beans, dried fruit, pomegranate and nuts

Aşure, or Noah’s pudding, is the dessert of generosity, made on the tenth day of Muharram and shared with neighbors, friends, and strangers alike. Wheat berries simmer with chickpeas, white beans, and dried fruit in sweetened water until thick and porridge-like, then are topped with pomegranate seeds, walnuts, and cinnamon. The legend says Noah made it from the last of the ark’s stores, which is why no two pots are quite alike. In Turkey, receiving a bowl of aşure means being treated like family, no matter who you are.

A pudding built for sharing

The wheat is tender and slightly chewy, the beans and fruit add sweetness and texture, and the whole thing is gently spiced and not too sweet. Chilled and topped with nuts and pomegranate, it is more celebration than dessert. Soak the wheat, chickpeas, and beans the night before, and expect it to thicken as it cools — loosen it with a little warm water if needed. Pomegranate seeds and crushed pistachios make it look as festive as it tastes.

Step by stepInstructions

  1. Drain the soaked wheat, chickpeas, and beans. Place them in a large pot, add the water, and bring to a boil. Simmer until the beans are tender, about 1 hour 15 minutes, adding more water as needed.
  2. Add the sugar, apricots, raisins, orange zest, and salt. Simmer gently, stirring often, until the pudding is thick and the wheat is very soft, about 30 minutes.
  3. Taste and add more sugar if you like, and more water if the pudding is too thick — it will thicken more as it cools.
  4. Ladle the aşure into small bowls or glasses.
  5. Cool, then chill until set.
  6. Just before serving, top each bowl with pomegranate seeds, walnuts, and a dusting of cinnamon.

💡 Chef tips & storage

Soak the wheat, chickpeas, and beans separately overnight — they cook at different rates. Aşure thickens as it cools, so keep it a little looser than you think it should be.
