Baghali Ghatogh

Baghali ghatogh comes from Gilan, the lush green province along Iran’s Caspian Sea, where fava beans and dill grow in abundance. It is a humble one-pot dish of beans and herbs, simmered with garlic and finished with eggs that poach gently right in the sauce. Locals eat it with rice and often a glass of sour yogurt drink, and everyone has a grandmother who claims the best recipe. It is one of those dishes that seems too simple to be special until you taste it — then you understand why the Caspian coast never tires of it.

Bright green, garlicky, and crowned with soft eggs

The stew is bright green and brothy, with soft, buttery fava beans and a bold hit of fresh dill and garlic. The eggs, cooked just until the whites set, add richness that turns the whole thing into a satisfying meal. Serve it over a mound of plain rice and break the yolks into the sauce as you eat. Leftover beans keep well and are delicious stirred into eggs the next morning.

Step by stepInstructions

  1. Heat the oil in a wide skillet or pot over medium heat and cook the garlic with the turmeric until fragrant, about 1 minute.
  2. Add the fava beans, salt, pepper, and water. Bring to a simmer, cover, and cook until the beans are tender, 15 to 20 minutes (frozen beans need less time).
  3. Stir in the dill and simmer uncovered 5 minutes more; most of the liquid should be absorbed.
  4. Make 4 shallow wells in the bean mixture and crack an egg into each.
  5. Cover and cook over low heat 5 to 7 minutes, until the whites are set and the yolks are still soft.
  6. Serve immediately over steamed rice.

💡 Chef tips & storage

Frozen fava beans work beautifully and save peeling time; if using fresh, blanch and slip off the skins first. Use fresh dill — dried will not give the same punch.
