Mince on toast has fed New Zealanders since the Depression, when a little mince stretched with gravy and served on bread was the definition of a filling meal. It’s still loved today as honest, wallet-friendly comfort food, and every family has a slightly different version.

The best versions are properly savoury — browned beef in a glossy gravy with a hit of tomato and Worcestershire, sometimes a whisper of curry powder. Piled onto buttered white toast, it’s simple, satisfying, and deeply nostalgic.

  1. Brown the beef and onion in the oil over medium-high heat until well coloured.
  2. Stir in the flour and cook for 1 minute.
  3. Add the stock, tomato paste, Worcestershire, and curry powder; bring to a simmer.
  4. Cook for 10–12 minutes until the gravy is thick and glossy; season.
  5. Serve hot over buttered toast.

💡 Chef tips & storage

Browning the mince properly is the difference between bland and brilliant. Add a splash more stock if you like the gravy looser.
