Kebab Barg

Barg means leaf, and this kebab lives up to the name: very thin slices of lamb tenderloin or leg, pounded, marinated in saffron and onion juice, and grilled so quickly they stay blush-pink inside. It is the refined cousin of koobideh, the kebab you order when you want something elegant. A good barg should be tender enough to cut with the edge of a fork. The onion juice in the marinade is the quiet hero — it tenderizes the meat without ever tasting raw, leaving only sweetness behind.

Silky lamb with saffron, smoke, and a lemony tang

The lamb is silky and intensely flavored, with the floral notes of saffron and a kiss of smoke from the grill. Melted butter and a shower of sumac finish it, adding richness and a bright, lemony tang. Serve it over rice with grilled tomatoes and raw onion rings, the classic Persian way. Step by stepInstructions

  1. Dissolve the saffron in 2 tablespoons of hot water and let cool.
  2. Squeeze the grated onion to collect the juice, discarding the pulp.
  3. Whisk together the onion juice, lemon juice, saffron water, oil, salt, and pepper. Add the lamb slices and turn to coat.
  4. Cover and marinate in the fridge at least 4 hours, preferably overnight.
  5. Thread the slices onto skewers, weaving them so they lie flat.
  6. Grill over high heat for 2 to 3 minutes per side, until charred at the edges but still pink inside.
  7. Brush with melted butter, sprinkle with sumac, and serve immediately.

💡 Chef tips & storage

Ask your butcher to slice the lamb 1/4 inch thick against the grain. Marinate overnight if you can; the onion juice is what makes the meat so tender.
