  1. Heat half the oil in a large pot and brown the meat on all sides, about 8 minutes. Add the onion and cook until soft, 5 minutes.
  2. Add the garlic, coriander, cumin, and allspice, and stir for 1 minute until fragrant.
  3. Stir in the grated tomatoes, tomato paste, salt, pepper, and water. Bring to a boil, cover, and simmer for 30 minutes, until the meat is nearly tender.
  4. If using fresh okra, dry-fry the pods in a hot skillet for 3 minutes, shaking often.
  5. Add the okra to the stew and simmer, uncovered, for 15 to 20 minutes, until the sauce thickens and the okra is tender.
  6. Stir in the remaining olive oil and the cilantro, and serve hot over rice.

💡 Chef tips & storage

If using fresh okra, toss the pods in a hot dry skillet for a few minutes before adding them to the stew — it tames the slime. Frozen okra is a great shortcut and needs no pre-frying.
